Buckeye Balls

Buckeye Balls are an EASY dessert made from peanut butter balls dipped in chocolate and refrigerated to make a no-bake candy treat with only 6 ingredients!
Ingredients
1 3/4 cups peanut butter
1/2 cup unsalted butter room temperature
1 teaspoon vanilla extract
3 cups powdered sugar unsifted
6 ounces semi-sweet chocolate chips
1.2 tsp olive oil
Instructions
To a stand mixer add the peanut butter, butter, vanilla and powdered sugar and beat it until it forms a stiff dough then then use a cookie scoop to form dough balls and the roll to smooth. Put the balls on a baking sheet lined with parchment paper then freezer for 25-30 minutes. I put mine in the freezer because I added more peanut butter than other recipes. My family likes a stronger peanut butter than chocolate flavor to these. Then, I melted my chocolate by boiling water in a sauce pan and then placing a glass bowl on top. I reduced the heat to about a 4 once the chocolate melted. I prefer this over the microwave because the microwave is easy to burn the chocolate. I added 1/2 tsp of olive oil to the chocolate as well to thin it out a bit. Once the water is boiling, place the glass bowl with the semi sweet chips in to melt. They should melt within a few minutes.
Pull the tray from the freezer, the balls shouldn't be frozen, but should be very firm. since there is more peanut butter in them, they will get too soft to dip if they aren't cold enough. Then it becomes a mess! Put a tooth pick in a peanut butter ball and dip halfway into the chocolate. Then place back onto the wax papered tray. Do this with all of the peanut balls until coated. If you're feeling froggy, sprinkle with nuts or graham crackers to add some crunch! I prefer mine plain. I let them sit until the chocolate hardens, then I place them in a plastic container with wax paper and freeze them until I serve them! Personally, I enjoy these best cold.
