Greek Yogurt Ice Cream Sandwiches! (105 calories)

Due to the Coronavirus, and being stuck at home, I've really been taking up cooking as a hobby. Lucky for me, my family makes delicious meals. I've always been around good food and loved enjoying each and every single bite! Like many others, the time being stuck at home, I gained a few pounds. Due to not having to pay my gym membership, I decided to try out NOOM. (this is 100% me just typing, not sponsored) I highly recommend it due to the fact it teaches you to eat better and really put thought into what goes into your body!
That being said, after losing about 8 pounds, I am more determined than ever to find ways to enjoy foods and treats I love, while still maintaining healthy habits. This has pushed me into finding and creating my own healthy recipes!
I don't know about you, but I love my sweets. Especially ice cream. There was nothing better as a kid, getting a push-up from the ice cream man on a scorching hot day. Unfortunately, ice cream can be super high in sugar and fats. I absolutely let myself enjoy it from time to time, but I wanted my own little treat I could pull out of the freezer. After snooping about different recipes and ideas, I came up with these gold mine ICE CREAM SANDWICHES are trust me, they are guilt free at only 105 calories. Shocking for how incredible these are!
They are so creamy, light, and delicious!!! I can't wait to try different flavors as the summer goes.

Makes: 18 sandwiches
Ingredients
2 sleeves of graham crackers (36 individual squares)
1 container of cool whip
6 medium sized strawberries
2 containers of Okios strawberry greek yogurt
Instructions
Line a cookie sheet with overlapping wax paper. You want to make sure the filling can't spill onto the pan. Then break each graham into an individual square. You should have 3 rows and 6 grahams across. Make sure they are tight without any space. You don't want the filling spilling over. Next, mix the entire container of cool whip with the two containers of yogurt until smooth. Finely chop strawberries and stir into the mixture. Then, spread the mixture over the grahams evenly. Top the filling with another layer of grahams. Make sure to line the grahams up evenly so they can easily be cut into sandwiches. Freeze for 2-3 hours. Take out of the freezer and trim with a sharp knife. If you intend to freeze them like I did, I wrapped them individually in saran wrap. Wha la! Amazing and delicious.
I haven't tried these flavors yet, but Okios also makes Banana Cream, Orange, Lemon, Raspberry, Key Lime Pie and Chocolate yogurt flavors. I will leave comments on how they go! I have a feeling they will all be amazing. Plus, you can top or mix in chocolate chips, sprinkles, etc whatever you're feeling. YUM YUM!
